Denver Melts
Makes two servings
- 2 slices Nature's Pride® 12 Grain bread, toasted
- 1 tablespoon light spreadable butter or margarine
- 2 tablespoons finely chopped onion
- 1/4 cup finely chopped green bell pepper
- 1/4 cup diced ham
- 3/4 cup egg substitute (or 3 large eggs)
- 1/4 teaspoon salt
- Freshly ground pepper, to taste
- 1/3 cup shredded reduced-fat Cheddar cheese
Melt butter in a 10-inch nonstick skillet over medium heat. Add onion and green pepper and cook, stirring frequently 3 to 4 minutes or until onion is tender. Reduce heat to low, add ham and continue cooking 2 minutes or until ham is hot. Stir so that ham and vegetables are evenly scattered over skillet.
Whisk together egg substitute, salt and pepper. Pour egg mixture into pan quickly; tilt pan to cover the skillet evenly. Cook over low heat about 1 minute or until bottom of eggs begin to set. Tilt the pan and lift the cooked eggs with the edge of a spatula allowing uncooked portions to run under the cooked eggs. Repeat until eggs are cooked. Cut egg mixture in half.
Place oven rack about 4 to 5 inches from broiler element. Preheat broiler. Place the toast in a single layer on a baking sheet Place half of omelet on each slice of toast. Sprinkle the top of each with cheese. Broil about 1 to 2 minutes or until cheese is melted. Cut in half and serve.
