Egg, Tomato and Cheese Breakfast Sandwich
Makes two servings
- 4 slices Nature's Pride® Multi-Grain bread, toasted
- 1 tablespoon light spreadable butter or margarine
- 2 eggs
- Salt and pepper, to taste
- 4 medium tomato slices
- 2 slices reduced fat Cheddar cheese
Melt butter in a nonstick skillet over low heat. Break eggs into skillet and cook, over low heat, until bottom of egg is set, about 2 to 3 minutes. Season egg with salt and pepper. Gently, turn egg over and cook until yolk is set and egg is cooked. Place one egg on a slice of toast. Top each egg with two slices of tomato and slice of cheese. Top with remaining slice of toast. Cut in half and serve warm.
