Apricot Cups
Makes four servings
- 2 slices Nature's Pride® Multi-Grain bread
- Butter flavor nonstick spray coating
- 1 can (15 ounces) light apricot halves, drained
- 1/4 cup packed brown sugar
- 2 tablespoons all-purpose flour
- 2 tablespoons light butter or margarine, softened
- 1/3 cup apricot all-fruit spread or apricot preserves
- 1/4 teaspoon almond extract
- 1/4 cup slivered almonds
Preheat oven to 375° F. Spray four ramekins or custard cups (8 ounces each; about 3 1/2-inches in diameter) with butter flavor nonstick cooking spray. Place about 1/4 of apricot halves in each cup.
Combine brown sugar, flour, butter, preserves and almond extract. Stir well with a spoon until blended. Spoon 1/4 of preserves mixture over apricots in cups.
Trim crust from the bread. Cut each slice of bread in half, then cut each half into four strips. Cut each strip into six slices, making 48 very small cubes from each slice of bread. Place bread cubes evenly over preserves mixture in each cup. Top with slivered almonds. Spray the top of each dessert with butter flavor nonstick spray coating. Place the filled cups on a baking sheet.
Bake 30 minutes or until golden brown. Serve warm.
