Nature's Pride BBQ Beef

Nature's Pride BBQ Beef

Makes eight servings
  • 16 slices Nature's Pride® 12-Grain or Country White bread, toasted
  • 1 onion, sliced
  • 2 1/2 to 3 pound boneless beef brisket or chuck roast, trimmed of fat
  • 1 can (8 ounces) tomato sauce
  • 3 tablespoons brown sugar
  • 2 tablespoons cider vinegar
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried minced garlic
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup barbecue sauce

Place onion in a 4-quart slow cooker. Place beef on top of onion. Combine remaining ingredients, except barbecue sauce and Nature’s Pride bread and pour over beef. Cover and cook on low setting 8 to 10 hours or until beef is very tender.

Remove beef; drain and reserve liquid. Using tines of two forks, shred beef. Return beef to slow cooker. Stir in barbecue sauce. Skim fat from reserved liquids. Pour 1/2 cup liquid into beef and blend well. (Add additional reserved liquid, if desired.) Cover and heat on high setting about 15 minutes or until hot.

Spoon about 1/2 cup beef mixture onto 8 slices of toasted bread. Top with remaining toasted bread. Cut in half and serve.

Tips: This shredded BBQ beef is easy to prepare using your slow cooker. If desired, refrigerate remaining beef and serve as a quick lunch or dinner the next day or cover, label and freeze for serving another time. Set frozen beef in refrigerator to thaw, then reheat in microwave oven until very hot. If desired, substitute purchased barbecued shredded beef for a quick, easy meal.
