Greek-style Pork Sandwiches with Cucumber Sauce

Makes four servings
  • 8 slices Nature's Pride® Whole Wheat bread, toasted
  • 2 tablespoon lemon juice
  • 2 tablespoons olive oil, divided
  • 1/2 teaspoon dried oregano leaves
  • 1/2 teaspoon garlic salt
  • 1 pound pork cutlets or thin, boneless pork chops, pounded to 1/4-inch thick
  •  
  • Cucumber sauce:
  • 1/2 cup plain low-fat yogurt
  • 1/2 cup finely chopped, unpeeled, seeded cucumber
  • 1 green onion (white and green portion), chopped
  • 1 teaspoon lemon juice
  • 1/2 teaspoon grated lemon zest
  • 1/4 teaspoon garlic salt
  • Dash pepper

Combine lemon juice, 1 tablespoon olive oil, oregano, and 1/2 teaspoon garlic salt in a zip-top bag. Add pork; seal and squeeze to coat the chops evenly. Seal and refrigerate 15 to 30 minutes.

Meanwhile, combine all ingredients for cucumber sauce; cover and refrigerate.

Heat remaining 1 tablespoon olive oil in a large skillet over medium-high heat. Drain pork and discard marinade. Arrange pork in a single layer in skillet and cook 3 to 4 minutes per side or until lightly browned and inside is just slightly pink for medium doneness.

Divide pork into fourths and arrange on four slices of Nature’s Pride bread. Top each with about 1/4 of cucumber sauce and then with remaining bread.

Tip: To quickly seed a cucumber, cut cucumber in half and scrape center with a teaspoon to remove seeds.
