Hummus Veggie Sandwich

Hummus Veggie Sandwich

Makes four servings
  • 8 slices Nature's Pride® Multi-Grain bread
  • 1/2 cup hummus
  • 1 tablespoon olive oil
  • 1 red bell pepper, cut into thin strips
  • 1 small zucchini, sliced thin
  • 1 small yellow squash, sliced thin
  • 1/2 medium yellow onion, sliced thin
  • Salt and pepper, to taste
  • 1/4 cup feta cheese

Heat olive oil in medium skillet over medium-high heat. Add pepper, zucchini, squash and yellow onion. Season vegetables to taste with salt and pepper. Cook stirring occasionally until vegetables are crisp tender or tender depending on your preference, about 5 to 8 minutes, set aside.

Spread 2 tablespoons hummus on four slices of Nature’s Pride Multi-Grain bread. Place a scant 3/4 cup of vegetables on each sandwich. Sprinkle each sandwich evenly with 1 tablespoon crumbled feta cheese. Top with remaining bread. Cut in half and serve.
