Italian Sandwiches

Italian Sandwiches

Makes four servings
  • 8 slices Nature's Pride® Country White bread
  • 2 teaspoons light spreadable butter or margarine
  • 2 tablespoons light mayonnaise
  • 8 to 12 slices salami
  • 1 cup jarred Giardiniera vegetables, drained and finely chopped
  • 4 slices provolone cheese

Spread four slices of bread with margarine on one side and mayonnaise on the other.

Layer salami on mayonnaise side of bread. Divide vegetables between sandwiches and place on salami. Top vegetables with provolone cheese.

Spread remaining four slices of bread with margarine. Top sandwich with bread, margarine side to the outside.

Preheat a large nonstick skillet over medium-high heat. Cook sandwiches until golden brown on each side and cheese is melted, about 2 to 3 minutes per side.

Tip: If you do not have Giardiniera vegetables on hand, substitute a combination of your favorite vegetables such as chopped carrots, cauliflower and broccoli to make 1 cup. Toss with 3 tablespoons of Italian salad dressing and let stand for a few minutes. Drain and proceed as directed.

Tip: Grill sandwiches in batches if skillet is not large enough.
