Fresh Grilled Tuna on Toast Points
Makes four servings
- 4 slices Nature's Pride® 12-Grain bread
- 1/4 cup reduced-fat mayonnaise
- 2 cloves garlic, minced or 1/2 teaspoon garlic powder, divided
- 2 tablespoons olive oil
- 1 teaspoon lemon juice
- 1/4 teaspoon pepper
- 1/8 teaspoon salt
- 2 fresh tuna steaks, about 8-ounces each
- 4 lettuce leaves
- 1 tomato, thinly sliced
- 1 green onion, sliced
Combine mayonnaise and 1 clove garlic (or 1/4 teaspoon garlic powder); blend well. Set aside.
Allow coals to burn down to white ash or preheat grill to medium-high heat. Lightly oil grill rack. Combine remaining garlic, olive oil, lemon juice, pepper and salt; brush over both sides of tuna steaks. Grill tuna five to six minutes per side or until just pink in the center and fish flakes easily with a fork. Brush fish with any remaining olive oil after turning.
Toast bread. Spread one side of each slice of toast lightly with garlic-seasoned mayonnaise. Cut each slice in half diagonally to make two triangles. Place two triangles of toast, mayonnaise side up, on each plate. Top the toast triangles with a lettuce leaf, then top each with 1/4 of the tomato slices. Cut each tuna steak in half and place one piece on top of tomatoes on each plate. Dollop with garlic-seasoned mayonnaise. Sprinkle top with sliced green onions.
