Pear Walnut Crostini Quarters
Makes eight appetizer servings
- 4 slices Nature's Pride® Country White bread, toasted
- 6 tablespoons reduced-fat whipped cream cheese
- 2/3 cup finely chopped walnuts, toasted, divided
- 2 ripe pears, quartered, cored and very thinly sliced
- 2 tablespoons apricot preserves
- 1 teaspoon lemon juice
Spread one side of each slice of toast with about 1 ½ tablespoons cream cheese. Set aside about two tablespoons of toasted walnuts to use as a garnish, then sprinkle remaining walnuts over cream cheese. Cut each slice of toast into quarters.
Arrange pear slices in a decorative fashion over the walnuts on each quarter.
Place preserves in a small microwave-safe bowl. Microwave on high (100% power) about 10 to 15 seconds or until preserves are melted. Stir in lemon juice. Lightly brush the top of the pears with preserves mixture. Garnish with reserved walnuts.
Tip: toasting the walnuts intensifies the flavor and causes the flavor to "pop." To toast walnuts, spread walnuts in a single layer in a baking pan. Bake at 350 degrees about five to seven minutes or until golden.
