Snacks should not only be nutritious, but they should taste amazing, too. Here are some recipes that will satisfy your between-meal cravings, all with the healthy goodness of Nature’s Pride™.
Quick Mexican Bread Cups
Makes six snack servings (two mini-cups per serving)
- 6 slices Nature's Pride® Country White bread
- 1 tablespoon light butter or margarine, melted
- 1/4 teaspoon chili powder
- 2 tablespoons salsa
- 2 tablespoons shredded reduced fat cheddar cheese
Preheat oven to 400° F. Spray a mini-muffin pan with nonstick spray coating.
Trim crusts from the bread and flatten with a rolling pin. Cut circles from the bread with a 2 1/2-inch round cookie cutter. (You can cut two circles from each slice of bread.) Gently press each round of bread into a mini-muffin cup, forming it into a bowl shape.
Combine melted butter and chili powder. Brush each bread cup lightly with melted butter mixture.
Bake eight minutes, or until lightly golden.
Spoon 1/2 teaspoon salsa into each bread cup. Top each with about 1/2 teaspoon shredded cheese. Return to oven and bake two minutes or until cheese melts. Serve warm.
