Scramblewich

Makes four servings
  • 8 slices Nature's Pride Multi-Grain bread, toasted
  • 4 to 5 beaten eggs
  • 1/4 cup low-fat milk
  • 1/4 teaspoon salt
  • 1/8 teaspoon coarsely ground pepper
  • 1/2 cup finely chopped cooked ham
  • 4 slices 2% American cheese

Whisk together eggs, milk, salt and pepper.

Lightly spray a medium skillet with nonstick cooking spray. Heat skillet over medium heat. Add eggs to skillet. Cook without stirring until egg mixture begins to set around the edges. Sprinkle evenly with ham. Using a spatula, lift and turn the egg mixture until it is cooked through, yet is still moist. Remove from heat. Gently place cheese on top of eggs and allow to melt.

Divide egg mixture into fourths and place on top of four slices of toast. Top with remaining four slices of toast.

Serve immediately.
