Southwestern Turkey Sandwich

Makes four servings
  • 8 slices Nature's Pride 100% Whole Wheat Bread
  • 4 tablespoons reduced-fat mayonnaise
  • 12 thin slices roasted or smoked turkey breast
  • 2 cups mixed salad greens
  • 1 avocado, peeled, pitted and sliced
  • 4 thin slices reduced-fat Cheddar or Monterey Jack cheese
  • 8 slices tomato
  • 2 tablespoons Dijon-style prepared mustard

Toast bread, if desired. Spread one tablespoon mayonnaise on one side of four slices of toast. Arrange the sliced turkey on top of the mayonnaise on the four slices of toast. Top the turkey with ½ cup salad greens,¼ of avocado slices, a slice of cheese and two slices of tomato. Spread 1 1/2 teaspoons mustard on one side of the remaining four slices of toast, then place toast, mustard-side down on top of tomatoes.
