Zesty Beef Sandwich
Makes four servings
- 8 slices Nature's Pride 100% Whole Wheat Bread, toasted
- ¼ cup reduced-fat mayonnaise
- 1 tablespoon minced fresh basil
- 1 clove garlic, minced (or ¼ teaspoon garlic powder)
- 4 lettuce leaves
- 8 thin slices deli-style roast beef
- ½ cup drained roasted red pepper, chopped
- 8 thin slices tomato
- 4 thin slices Provolone cheese or part-skim milk Mozzarella cheese
Blend together mayonnaise, basil and garlic. Spread mayonnaise mixture on one side of each slice of toast. Top mayonnaise side on half of the slices with a lettuce leaf, two slices of beef, about two tablespoons of chopped roasted red pepper, two slices of tomato and one slice of cheese. Top with remaining toast, mayonnaise side down.
